做(zuò )法(fǎ ):春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮到(dào )水快熬(áo )干的时候加入(rù )盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
