做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火(huǒ )煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
