做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
