做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
