做法:春(chūn )笋切成片后加少许(xǔ )盐捞出后(hòu )用清(qīng )水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖(mèn )。
