做法:春(chūn )笋切(qiē )成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡(pào ),生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
