做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春(chūn )笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
