做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火(huǒ )。煮到水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍(shāo )收汁时盖(gài )上锅(guō )盖焖。
