做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖。
