做法:春笋切成片后(hòu )加少(shǎo )许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半(bàn )掩住(zhù )春(chūn )笋(sǔn ),盖(gài )上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
