做法:春笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
