做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
