做法(fǎ ):春笋切成片后(hòu )加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入(rù )少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
