做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
