做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞(lāo )出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
