做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖焖。
