做法:春笋切(qiē )成片后加少许盐(yán )捞出(chū )后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候加入(rù )盐,翻(fān )炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
