做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
