做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽(chōu )、蚝(háo )油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
