做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
