做法:春笋(sǔn )切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分(fèn )钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
