做法(fǎ ):春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
