做法:春(chūn )笋切成片后加(jiā )少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖上(shàng )锅盖焖。
