做法:春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
