做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖(mèn )。
