做法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的(de )时(shí )候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
