做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
