做法:春笋切(qiē )成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
