做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的(de )时候(hòu )加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅盖(gài )焖。
