做(zuò )法:春笋(sǔn )切成片后加少(shǎo )许盐捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
