做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡(pào ),生姜(jiāng )切片,葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖(mèn )。
