做(zuò )法:春笋切成片后加少(shǎo )许盐捞出(chū )后用(yòng )清水浸泡(pào ),生(shēng )姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
