做法(fǎ ):春笋切成(chéng )片后加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
