做法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入(rù )2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老(lǎo )抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
