做法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
