做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧(shāo )热(rè ),倒入(rù )2勺油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
