做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩(yǎn )住春笋,盖(gài )上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
