做法:春笋切(qiē )成片后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清(qīng )水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖(gài )焖。
