做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
