做法:春笋切成片(piàn )后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬干(gàn )的时候(hòu )加入盐(yán ),翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅(guō )盖焖。
