做法:春笋切成片(piàn )后加少许盐捞出(chū )后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
