做法:春笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒(chǎo )均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
