做法:春笋切成片(piàn )后加少(shǎo )许盐捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱切(qiē )成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右(yòu )。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
