做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均(jun1 )匀,加(jiā )入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
