做法:春笋(sǔn )切成(chéng )片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖焖。
