做法(fǎ ):春(chūn )笋(sǔn )切成(chéng )片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
