做法:春笋切成片(piàn )后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中(zhōng )火(huǒ )。煮到水(shuǐ )快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅(guō )盖焖。
