做法:春笋切成片后(hòu )加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖(gài )焖。
