做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
