做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放(fàng )入(rù )生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱(cōng )段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
